Baldo is a very valuable rice, with an important genealogy. It stands out for the harmonious proportion of the grains, its rare crystalline and almost glassy appearance, the special creamy consistency and its great versatility of use.
Ideal for classic or creative, always creamy and well blended risotto, Baldo produces a sort of natural creaming with a real “all’onda” effect, thanks to its generous release of starch. Also excellent for savory and sweet pies, supplì, arancini, sartù and timbales.
