Baldo Riserva is obtained from paddy rice (raw rice) of the Baldo variety left to stand for a least one year according to an ancient ageing process in which the starch stabilizes and reduces its dispersion in the preparation liquid.  In addition  to maintaining the special creaminess of unseasoned Baldo, its grains increase in volume during cooking with great visual effect of the plate, ensure superior over-cooking resistance and have a better nutrient retention.

Baldo riserva, RisoTesta’s specialty, is made from paddy rice (raw rice) of the precious Baldo variety left to age after drying for at least one year in storage silos. This process provides superior over-cooking resistance, a special crunchy texture, more intense flavor, an increase in volume of the grains with great visual effect, better preservation of the nutritional properties and greater digestibility.

BALDO riserva is ideal for creamy and well-blended risotto, with a real “all’onda” effect. It is also suitable for baked dishes, stir-fried rice and salads
